Spiced Apple Protein Overnight Oats

Wheyhey may be an ice-cream but that doesn’t mean you can’t mix it with Autumn flavours and our chef Pamela has proved just that. The flavours of cinnamon, ginger and nutmeg, together with apple and vanilla, are one of her all-time favourites. Pam fully embrace this combination – so here you go, a super simple but absolutely delicious, protein- packed breakfast option, finished off with a pot of Wheyhey. Perfection!

SPICED APPLE PROTEIN OVERNIGHT OATS
Serves 2
Ingredients:
2 tbsp rolled oats (I used Mornflake)
2 tbsp jumbo oats (again, Mornflake)
1 tbsp chia seeds (I used Kaizen Living)
1 scoop vanilla protein powder (I used PhD Nutrition diet whey)
½ tsp mixed spice
¼ tsp each extra of ground ginger and cinnamon
½ tsp vanilla extract
1 apple, grated
6 tbsp almond milk
1 tub Wheyhey Vanilla ice cream
Walnuts and one apple, to decorate

This is such a simple recipe – make the night before so you have breakfast all ready in the morning!
Simply mix together the oats, chia seeds, spices and protein powder in a kilner jar or tub with a lid. Stir in the grated apple, then pour the almond milk in and mix well, together with the vanilla extract. It should be a little liquidy, which is fine as the oats and chia seeds will soak this up.
Leave overnight in the fridge to chill and thicken.
In the morning, remove your Wheyhey tub from the freezer about 5 minutes beforehand, then serve it on top of a portion and top with extra apple slices and a few walnuts. Sorted!
