Wheyhey and Protein Brownie Layer Cakes

With the weekend upon us, there is nothing more we fancy than creating an indulgent little treat.

These Protein Brownie’s sandwiched together with a Wheyhey makes for the perfect dessert, that won’t wreck the diet. They taste incredible and will satisfy any chocolate cravings.

Ingredients:
For the brownie
1/2 cup flour (I used almond flour)
6 tbsp  cacao
2 scoops whey protein (I used chocolate hazelnut)
1 egg
1 tsp vanilla extract
150g unsweetened apple puree
2 tbsp chocolate peanut butter
4 squares dark chocolate
2 tbsp coconut oil
1 tbsp natural sweetener (optional)

1-2 150ml tubs of Wheyhey – just pick the flavour you fancy!

Method:
1) Preheat oven to 180C then grease and line a loaf tin. To make the brownie, mix together the flour, cacao, protein and natural sweetener. In a separate bowl, whisk together the egg, vanilla and apple puree.

2) Gently melt together the 4 squares of dark chocolate with coconut oil, then stir into the egg mixture. Mix into the dry mixture until just combined, then spoon in the peanut butter and give a good stir.

3) Pour into the loaf tin, then bake the brownie for around 18-20 minutes so that it’s still gooey, then leave to cool.

4) Once the brownie is cool, cut into circles and set aside. Remove your mini Wheyhey tubs from the freezer and, using a sharp knife, cut through the tub to form circles of ice cream. Peel the Wheyhey wrapper from the ice cream circles, then sandwich between two brownie pieces.

All that is then left, is to devour and enjoy!
