Wheyhey Cookie Dough Sandwiches

We’ve been teasing you all with this Wheyhey recipe created for us by the wonderful Hebe but the time has come for us to share it with you!

A protein packed dessert that contains ice cream, chocolate chips and cookie dough – the healthy version of all of course, who’d have thought it possible!

Ingredients:
120g chickpeas, drained and rinsed
15g peanut flour (I used Sukrin)
15g smooth peanut butter
15ml almond milk
25g Natvia sugar-free icing mix (or xylitol), adjust to taste
1 tsp vanilla extract
1/4 tsp caramel extract
1/2 small tub WheyHey banoffee ice cream
Small handful of sugar free chocolate chips

Directions:

  • Blend together the chickpeas with the almond milk, peanut butter and vanilla and caramel extracts until completely smooth – a hand blender works best. Stir in the peanut flour and Natvia/xylitol with a good pinch of salt, followed by the chocolate chips.
  • Spread half of this mixture in the bottom of a small loaf tin/mould and pop in the freezer. Once firm, remove a tub of Banoffee Wheyhey from the freezer and allow to melt enough so you can spread it over the first layer of cookie dough. Put back in the freezer until firm, then top with the remaining cookie dough mixture and freeze once again.

 

Remove a few minutes before wanting to eat to allow the cookie dough sandwich to soften a little. Enjoy!
