Movember Special: Banana, Peanut & Banoffee Protein Stack

If you’re a fan of iced desserts packed full of flavour but without the sugar, fat and empty calories, you’re in for a treat with these tubs of protein-packed goodness, in Strawberry, Vanilla or Chocolate flavours.

With the news of launching a new Banoffee flavour in partnership with Movember, I was beyond excited to try it and create a special recipe. The result? A combination of banana, peanut butter, caramel and banoffee to create this sweet, filling but guilt-free dessert. Recipe serves 4.

For the peanut & vanilla cookies (makes 8)

  • 3 tbsp crunchy peanut butter
  • 3 scoops vanilla protein powder
  • 2 tbsp stevia
  • 1 tsp coconut oil, melted
  • 1 tsp coconut flour
  • 75ml unsweetened almond milk

Preheat the oven to 190 degrees C and grease a baking sheet with coconut oil.

Simply put all of the ingredients in a bowl and get your hands dirty! Mix well to ensure you have a dough-like consistency, not too sticky or too dry.

Dust a surface with a little coconut flour and divide the dough in half. Roll out and cut 4 circles and place on the baking tray. Repeat with the remaining dough.

Bake for 10-12 minutes until you have golden cookies, remove from the oven and leave to cool on a wire rack.

For the chocolate moustaches:

  • 50g sugar-free milk chocolate
  • ½ scoop vanilla or chocolate protein powder (depending how rich you like it)

Break the chocolate up into pieces and put in a small glass bowl over a pan of simmering water – be sure the bottom isn’t touching the water. Once fully melted, stir in the protein powder until you have a thicker texture ready for icing (be careful it’s not too thick or runny, and has no lumps in!).

Once your cookies have cooled down, place the mixture into a piping bag and decorate each cookie with moustaches – you need a steady hand for this! Leave to set for at least 30 minutes.

For the banana caramel ‘sauce’:

  • 2-3 bananas, slice
  • 2 tbsp Walden Farms Caramel syrup (calorie, fat and sugar-free)
  • ½ tsp vanilla extract
  • 1 tsp coconut oil

Heat the coconut oil in a pan and add the slices of banana, stirring well and gently cooking so they start to brown slightly. Once the oil has evaporated, stir in a little Walden Farms caramel syrup and vanilla so it heats through and the sauce thickens slightly.

And for the most important ingredient… Banoffee Wheyhey Ice Cream, of course!
Remove from the freezer about 10 minutes before serving. With a sharp knife, cut through the tub and slice one tub up into four, ready to layer.

Place a cookie on a plate or bowl and add a ‘slice’ of Banoffee Wheyhey ice cream. Top with some of the banana slices and sauce, then place another cookie on top and repeat with the other cookies if serving for more than one. There you have it: a special, protein-packed tasty and healthy dessert!
